For the bolognese:

1 onion, diced
1 red pepper, diced
1 clove of garlic
120g of spinach
400g chopped tomatoes
200g Quorn mince
pinch of sugar
1tsp mixed herbs
1tsp paprika
½ tsp chilli flakes

For the white sauce:

30g butter
2 tbsp plain flour
300ml milk
30g mature cheddar
You will also need around 10 lasagne pasta sheets depending on the size of your dish.


Add the onion, and garlic to a pan and fry for 5 minutes. Then add the pepper and spinach and cook until spinach has wilted.

Mix in the chopped tomatoes, Quorn and spices and simmer for 15 minutes.

While the Bolognese is cooking, make the white sauce.

Add the butter to the saucepan until melted. Then mix in the flour. Take off the heat and gradually add the milk, until it the sauce is smooth. Then return the pan to the heat and stir until the sauce thickens. Add the cheese and stir until it is all melted into the sauce.

To put the lasagne together add half the Bolognese to a baking dish. Then top with a layer of pasta sheets. Add half the white sauce on top and the remaining Bolognese. Add another layer of pasta sheets and top with the remaining white sauce. To finish add some grated cheese to the top.

Bake the lasagne for 40 minutes at 180°C
